Ingredients

  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons Mountainside Apiary Wisconsin Clover Honey
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg, optional
  • Fresh thyme leaves or chopped pecans for garnish, optional

Directions

  1. Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. Place the sweet potato cubes in a large bowl.
  3. Whisk together the honey, melted butter, olive oil, cinnamon, salt, pepper, and nutmeg.
  4. Pour the honey mixture over the sweet potatoes and toss until every piece is evenly coated.
  5. Spread the sweet potatoes in a single layer on the prepared baking sheet, leaving a little space between the pieces.
  6. Roast for 25 to 30 minutes, turning once halfway through, until tender and caramelized around the edges.
  7. Transfer to a serving bowl and finish with fresh thyme, chopped pecans, or a light drizzle of honey.

Serving Suggestions

Serve alongside roasted chicken, pork tenderloin, glazed ham, turkey, or a simple green salad. They also make a warm addition to grain bowls and holiday dinners.

Beekeeper’s Tip

Give the sweet potatoes plenty of room on the pan. Crowding traps steam and prevents the honey-coated edges from developing their deep caramelized finish.

Best Honey PairingWisconsin Clover Honey

Its smooth, familiar sweetness blends naturally with cinnamon and butter while allowing the earthy flavor of the sweet potatoes to remain the star.
