Honey Glazed Carrots

Tender roasted carrots coated in a rich honey butter glaze with hints of garlic and fresh thyme. Naturally sweet and beautifully caramelized, this simple side dish pairs perfectly with everything from weeknight dinners to holiday feasts.

Ingredients

  • 2 pounds whole carrots, peeled and cut into 2-inch pieces, or rainbow carrots
  • 2 tablespoons olive oil
  • 1/4 cup Mountainside Apiary Wisconsin Clover Honey
  • 2 tablespoons unsalted butter, melted
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Garnish

  • Fresh chopped parsley
  • Fresh thyme sprigs, optional

Directions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together the olive oil, honey, melted butter, garlic, thyme, salt, and pepper.
  3. Add the carrots and toss until they are evenly coated with the honey glaze.
  4. Arrange the carrots in a single layer on the prepared baking sheet.
  5. Roast for 20 minutes, then turn the carrots and spoon any glaze from the pan back over them.
  6. Continue roasting for another 10 minutes, or until the carrots are tender and lightly caramelized around the edges.
  7. Transfer to a serving dish and drizzle with any remaining glaze from the baking sheet.
  8. Garnish with fresh parsley and thyme before serving.
