Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 tablespoon Mountainside Apiary Wisconsin Clover Honey
Honey Butter Glaze
- 3 tablespoons unsalted butter, melted
- 2 tablespoons Mountainside Apiary Wisconsin Clover Honey
Directions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease a cast-iron skillet.
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda.
- Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingertips until it resembles coarse crumbs.
- In a small bowl, whisk together the buttermilk and honey.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
- Turn the dough onto a lightly floured surface and gently fold it over itself 4 to 5 times to create flaky layers.
- Pat the dough to about 1-inch thick and cut with a 2½-inch biscuit cutter. Place the biscuits so they’re just touching on the prepared baking sheet or skillet.
- Bake for 13–15 minutes, or until the tops are lightly golden brown.
- While the biscuits bake, whisk together the melted butter and honey.
- As soon as the biscuits come out of the oven, generously brush the tops with the warm honey butter glaze. Serve warm.
