Honey Mustard Chicken

Tender, juicy chicken coated in a rich honey mustard glaze that’s sweet, tangy, and full of flavor. This easy one-pan recipe comes together quickly, making it perfect for busy weeknights while still elegant enough to serve guests.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup Mountainside Apiary Wildflower Crest Reserve Honey
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon olive oil
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley, chopped, for garnish

Directions

  1. Preheat the oven to 400°F and lightly grease a baking dish large enough to hold the chicken in a single layer.
  2. Pat the chicken dry and season both sides with the salt and black pepper.
  3. Whisk together the honey, Dijon mustard, whole grain mustard, olive oil, garlic, lemon juice, and thyme until smooth.
  4. Arrange the chicken in the prepared dish and spoon the honey mustard mixture evenly over each piece.
  5. Bake for 20 to 25 minutes, spooning the glaze over the chicken once halfway through cooking.
  6. Cook until the thickest part of each chicken breast reaches 165°F.
  7. Rest for 5 minutes, garnish with fresh parsley, and spoon the pan glaze over the chicken before serving.

Serving Suggestions

Serve with roasted baby potatoes, green beans, rice, mashed potatoes, or a crisp garden salad. The extra pan glaze is especially good spooned over vegetables.

For the glossiest glaze, spoon the pan sauce over the chicken halfway through baking and again just before serving. Keep a close eye on the edges because real honey caramelizes quickly.
